Dattu Sastry Scholarship Award Recipient.  Sumanjot Kaur investigates the use of supercritical carbon dioxide (SCCO2) as a sustainable alternative to conventional hexane extraction for soybean processing.  Recognizing that soybeans are a rich protein source (35–40%) but are limited by undesirable volatile compounds, the research focuses on improving flavor and overall product quality.  Multiple extraction conditions using both hexane and SC-CO2 were evaluated for their effects on soybean flour and soy protein isolate (SPI).  The findings show that SC-CO2 achieves lipid extraction yields comparable to hexane (~20%) while significantly reducing off-flavor
volatile compounds. SC-CO2-treated samples also exhibit improved color, higher protein purity, and enhanced functional properties. Notably, increases in water absorption, foaming capacity, and foam stability were observed.  The S3 SC-CO2 condition produced SPI with the best overall performance, including superior solubility and structural characteristics.  Structural analysis further revealed beneficial protein conformational changes in SC-CO2-treated samples. Overall, this research demonstrates that SC-CO2 processing is an effective, green, and solvent-free approach to improving the aroma, functionality, and quality of soybean-based ingredients.
